The Product encompass one or more defined plans, you can imaging that the Product is a collection of plans.

And the Product concept can help organize the flat plans into product-based groupings, assume you have two products, but they have difference pricing strategies, you can create two distinct Product and then create two difference Plans within each Product to express different pricing strategies.
